chicken wings

My husband likes to eat wings. And he can eat a lot of wings. He got very excited when a co-worker of mine brought home made barbque wings to our staff Christmas party. This is my own take on Ellen's recipe.


Pre-heat the over to 300. Place the wings, (or in our case, drummettes) in a baking dish. Mix up the sauce. mine included:

1 cup brown sugar
1/2 cup tamari (gf soy sauce)
2 tablespoons GF bar b que sauce
2 Tablespoons honey
some cracked red pepper



Pour the sauce over the chicken and place in the oven for 3hrs.

After 3 hrs, the chicken will get all crispy and caramelized - take them out and enjoy! We enjoyed our with a green salad with pecans and GF dressing.

Review - going gluten free at Beau Jo's


I have been many times to the original Beau Jo’s pizza in Idaho Springs, Co – I always left there stuffed and bloated. That was how I felt every time I ate pizza. I called it ‘pizza belly.’ However, this was eating glutenfull pizza.

Beau Jo’s has a gluten free pizza crust. And its good. Crispy, crunchy, and a bit chewy. B and I got a pizza topped with pesto, artichokes, mushrooms, and olives with mozzarella cheese. It was yummy.

Beau Jo’s also serves gluten-free beer! (I got to drink a beer!!!!!!!) It was an Anheuser-Busch Redbridge. And maybe its just been awhile since I had a beer, but I really liked it.




We are back from the mountains!


B and I survived the freezing cold conditions of Steamboat Springs. As I stated before, we stayed in a cabin at the Strawberry Park Hot Springs. The hot springs were nice and warm, but everything else was cold. That’s what we get for going in the middle of winter. We enjoyed our trip, Steamboat is a very quaint little town, but while we were huddled around the heater, each of us wearing two sweatshirts, we just kept thinking that this would be so much better if it was July instead of January. Despite the cold, it was picturesque.

We took our own food with us, and it worked pretty well, but even before we left, we made a few changes to our meal planning. Here is what we ate:

Wednesday -
Breakfast – (at home) I ate yogurt.
Lunch – Grape, carrot, and curry chicken salad on a bed of lettuce. B grilled & chopped some chicken breasts Tuesday night, then I tossed the pieces with curry powder, sliced green grapes, shredded carrots, gluten free mayo, some almond slices, and basil, and served it on top of lettuce.
Snack- Grapes (in the car) while

Dinner (part 1) – Tacos: B cooked up some ground turkey Tuesday night and packed it in the cooler with black beans, a jar of salsa, and a block of cheese. He bought corn tortillas. When we first arrived at our cabin we were hungry, so B got out the taco fixings and made me the worlds coldest and most frozen taco…..ever. After eating it, I cried a little.
Dinner (part 2) We went down to the hot springs….which was so dark I could barely see B….and after our swim we went back up to our cabin to play cards, drink wine, and eat defrosted tacos. We also enjoyed some corn chips and B’s homemade, best in the world, guacamole. I don’t know what he puts in it, but its amazing.

Thursday -
Breakfast - Pre-made scrambled eggs with spinach and goat cheese, warmed over the heater.
Snack – Dried apricots

Lunch – Lunch at Beau Jos  - more on that later
Dinner – Steak cooked on the grill. Sautéed mushrooms. Diced sweet potatoes.

Fri-
Breakfast – Hebrew National Hot dogs. Carrots and Celery
Snack - on the road, almonds and dried apricots


We had a pretty good trip. Steamboat Springs is one of those towns that looks like Stars Hollow (Gilmore Girls reference) I went into this adorable little gourmet food shop and found a delightful sounding Champagne – Maple – Mustard marinade and Red Raspberry Vinegar that Bob would not let me buy. I had a good time and would even go back, preferable when the weather is not 20 below.

Where the hell?

Tomorrow B and I are heading up the mountains to Steamboat Springs. There, we will be staying in a cabin at the Strawberry Hot Springs Park. This cabin has no electricity and no indoor plumbing. But hey, it does have some hot springs, and they are clothing optional after dark.

One of the nice things about this trip is the food. We are going to be cooking most of our meals at the cabin, so we won't have to find GF restaurants.

Here's what we are planning on doing.

Wednesday -
Breakfast - at home
Lunch - pre-made picnic (car picnic) of grape chicken salad, veggies, fresh fruit, and crackers
Dinner - Steak, roasted potatoes & veggies, salad

Thursday -
Breakfast - Pre-made GF breakfast burritos, fruit
Lunch - Salad, pre-made GF chili
Dinner - grilled fish, veggies, salad

Fri-
Breakfast - Pre-made GF Breakfast burritos, fruit
Lunch - on the road, possibly Beau Jos
Dinner - at home.....?

Snacks -
GF crackers
Rosemary nuts
cheese
dried fruit

Drinks -
Lots of water
Tea
Box wine

Review - Diego Zhangs

Last night, I agreed to take B to dinner and a movie. We saw Avatar, it was good, but the 3D gave me a headache.

 

We went to dinner before the movie at Diego Zhangs http://www.diegozhangs.com/ which is a Burger Café. They have mini burgers, soup, and salads. Their menu is labeled for vegetarians and GFs.

 

Months ago, when our Diego Zhangs location opened, B and I went there and had burgers, and frankly, they aren’t that good. On the other hand, the salads are AMAZING!!!! Last night I had the Gluten Free Incan Quinoa salad. It was really really good and tasty.

What's in it? Rice Chex



After watching Food Inc. I have been curious to what is in the food that I eat. Lately I have been eating a lot of Rice Chex, as they are Gluten Free.

The ingridents are:
Rice
Whole Grain Rice
Molasses
Vitamin E
and BHT added to preserve freshness.




I know what rice is. And whole grain rice. I know molasses. I even know vitamin E.

I dont know what BHT is. It stands for Butylated Hydroxytoluene and is added to food and materials to prevent the oxidation, or breakdown of the molecules. It can be sold sepratly as a health food supplement that can have anti-viral effects.

Food Inc.



Bob and I had movie night the other night, and we watched Food Inc. It is a film about the food industry. Do you know where your food actually comes from? Do you know whats actually in your food?

The film features the heavy hitter of Food Journalism - Eric Schlosser and Michael Pollan.

I recommend that everyone rent it, Netflix it, get it from the library, or On Demand. And check out http://www.foodincmovie.com/



From this film, I learned that Smithfield Farms is pretty much evil. They bully their employees and their animals. Sows breed in small, dirty crates. Many employees are illegal imigrants and given horrible jobs. Paula Deen is a spokesperson for Smithfield products. So, at my attempt at activism, I emailed Paula to express my disappointment for alligning herself with such a company.

I have joined a club that has 3million other members...

I have Celiacs disease!!!!! And I now get to cook, eat, and live Gluten Free. Bob gets to as well, since he lives with me.

For years I have felt tired, and crabby, and overall icky. Bloaty too. My doctor suspected Celiacs, because I had many of the symptoms. I started reading up on it and researching it and was shocked. The first book I read was Elisabeth Hassleback's "The G Free Diet" and I was amazed becuase I finally felt as if another person in the world knew how I was feeling.

As far as diseases go, its actually not a bad one to have. All I have to do is cut Gluten out of my diet. That’s it. No medication. No regular tests. Just a modified diet.

No Rye

No Oats

No Wheat
